The itch is getting stronger. We are about 5 weeks out from our first competition of the year. Our season is going to begin in London KY at the Grills Gone Wild BBQ Festival.

I had high expectations of doing a lot of practice cooks to refine the flavor profiles that were recently learned, but thanks to the midwest weather this year my cooking has been limited to only a couple times. Today is going to be one of them. I am all about cooking no matter what the weather but I draw the line at subzero temperatures and then unreal windchills. 

Hopefully we’ll get some better weather and I can stock the freezer up again.
